Feed the ego
Feb. 20th, 2006 08:35 pmDinner tonight was great. Mushroom risotto - my best ever.
Note to Self :
* use lots of butter, not olive oil.
* sage & oregano, no basil
* pepper, salt, herb salt, a bit of turmeric, a dash of dried ginger, some cumin and plenty of paprika
* 1 onion, 1-2 cloves garlic, 1 chilli
* white wine vinegar + sugar
* rinse rice and stir through butter/onion mix, then add the stock (& mushrooms)
* proceed as usual
Also made some yummy bread to go with. Crushed some garlic and tore up some Greek basil. Mixed through a little balsamic vinegar, then added plenty of olive oil. Steeped for a few hours, then thickly sliced some crusty white bread (pasta dura), toasted it under the grill until top side firm but not browned. Brushed with oil mix, grilled unitl golden, then turned and did the same to the other side. It was rather yum.
What else? Picked up the invitations this afternoon. It's on!
