Rocket Pesto

I just made some pesto out of the rocket growing like crazy in my garden! Very quick and easy to make and it tastes great! I thought I'd share the recipie for anyone else wondering what to do with a garden full of over-enthusiastic rocket plants. Apologies for the lack of measurements - I made it up as I went along and didn't measure anything.

Ingredients:
- Mixing bowl full of baby rocket
- 6-8 cloves of garlic
- handful of lemon thyme
- ¼ cup roasted pine nuts (ground)
- olive oil
- black pepper
- herb salt
- salt
- dried flat leaf parsley
- balsamic vinegar
- raw sugar (approx 1tbsp)
- ¼ lemon
Method:
- Finely chop rocket and crush garlic
- Heat olive oil in saucepan
- Fry ground black pepper, salts, and handful of crushed dried parsley
- Add garlic and stir to brown
- Add lemon thyme, dash of balsamic vinegar and sugar
- Stir until lightly caramelised
- Add rocket and stir until just cooked
- Process rocket mix with a little extra olive oil in a blender until smooth paste
- Stir in pine nuts and juice from ¼ lemon
- Jar and refrigerate
